Always a pleasure to receive the new edition of Alastair Sawday's, Special Places to Stay, French B and B and to be one of the 680 adresses selected.
I like the way the team of Alastair describe each special place, as they say without a blanket standard. Sometimes a pinch of humor typically british, is difficult to understand for us.
I like to read also carefully the first pages about the spirit of a chambre d'hôtes, what you have to expect or not, the new types of behavior with internet evolution, practical advices...

Le panier du jeudi, vegetables on thursday.

Every thursday in Peronne I pick a basket of vegetables. I enjoy to have vegetables from the season, always fresh. It is exciting to decide the menu from the vegetables I got : spinach, chard, courgette or tomatoes ...Vegetables are a source of huge inspiration. This year very early I can peak the first apples, the best variety for apple tart, one of my favorite dessert.
Grace à une association Amap mise en place à Péronne, j'ai enfin trouvé un producteur de légumes biologiques ; et tous les jeudis, c'est la surprise pour la table d'hôtes des jours qui suivent : un bol de fèves patiemment épluchées, une fondue d'épinards, des gratins de courgettes, une salade craquante ou un radis noir bien piquant ... et comme par contagion, le potager s'est mis à me surprendre avec ça un rang d'oignons là de la roquette ou du basilic. Au verger, j'ai cueilli les premières pommes que l'on nomme pommes d'Août ou Transparente. Cette pomme était très recherchée autrefois par les patissiers. Demain au menu : tarte aux pommes !
Pour les amateurs de légumes, une bd de Christophe Blain " En cuisine avec Alain Passard ".

Londres: B&B, restaurants and WAR HORSE

Again good experiences in London: same B&B, London guests at home, in Fulham where I spent five days in welcoming atmosphere. I always feel like at home.
On one evening, in a pub in Fulham, we had traditional english dishes in a very special ambiance; we had to participate to a quiz. During the week-end, at Borough Market, my first fish and chips, it was recommended by Ducasse, a very tasteful experience and very British of course. In Portobello, we could recommend the Portobello Organic Kitchen, they said they are cooking the most fabulous Sunday roast in London, sorry we didn't have time to experience every Sunday roast of the town... We can't forget an afternoon tea in Fortnum and Mason with a fabulous chocolate made with an italian produce Amedei and, of course, scones and clotted cream.
But the most unforgettable experience is War Horse in the New London Theater, a truly moving story played by wonderful actors including horses. They are impressive and massive puppets and seen from our seats on the first rank they look incredibly alive. We could see how puppeteers brought mobility, movement ( of ears for example) and sounds and soon we forgot mechanism, wood and puppets ; we were captivated by horses " la plus noble conquête de l'homme". The relationship between humans and animals take place in the theater of the first World War, our history.
Not far from here, in a small village Chipilly, there is a moving monument of a man and his wounded horse, commemoration of the 58 th british division.

Une inscription de la table française au patrimoine mondial de l'Unesco : pas pour notre cuisine, mais pour notre art de vivre à la française . Avec humilité les tables d'hôtes sont une contribution à ce talent que nous partageons avec d'autres pays. Et ce talent est indissociable de la cuisine.
In December Unesco listed the gastronomic meal of the French as a World Heritage.
A festive meal bringing people together for an occasion to enjoy, the art of good eating or drinking, the french way to prepare a meal with a succession of dishes and association of food and wines, that is our heritage.
I can say with J.R. PITTE, who was in charge of that question :our work has just begun
in the context of globalization and the modern life. what threatened is the joy of living we get through what we eat and drink

Our cooking is at stake now ; our legacy is very strong but has to be maintained always alive , not only in restaurants but also at home.
Of course I do not totally disagree with a Daily Telegraph comment about the Unesco's decision, the artery-clogging richness of the saucing and the prissy presentation went out of vogue. Yet the grandiose self importance of french restaurants and the froideur of the staffs survive

As a clin d'oeil, you can listen on internet, with a very funny english, a conference by the very well known chemist Herve This, in the most famous cooking school in Paris, Ecole du cordon Bleu.

We are more and more actually aware of the enormous responsibility held by our life and our activity to the environment. It is why I try to minimise the carbon footprint at every turn : In the house : my favourite way of heating is sun with the design of the south-face facade of glasses and wood in the stove . Cooking and food are the main concern : after many years I have collected addresses of producers, and most of them are organic. I cook with seasonal ingredients, and more and more vegetables. Gardening herbs, a few vegetables and fruit trees is a pleasure, as I encourage whenever it is possible wild life, birds, butterflies, worms, hedgehog ...And year after year, I am giving up the idea of an ever green lawn for the dream of a meadow ...which seems to be more suited to the surrounding countryside and our real need.

Last news from the season

Autumn is coming , it is time for looking back the last few months. Remembrance, commemoration and history of the First World War is the main target of many of the guests I receive. A lot of Australian this year, not only for Anzac Day, English, more and more French, and a few German. Some of them are very regular, like John and Martha, or John and Primrose ( coming with their Morgan), Edward ( and his son) and Greta working about the crosses used first on the graves , Aled a welsh photographer interested in Delville Wood ; many Australian families visiting for the first time a grand father or a great uncle ... a young German man visiting the Battlefields all the week on his bike ...Emotion, Compassion, incomprehension, all have the same feeling. At the same time walking in the cemeteries and in the countryside bring impression of peace and rest.
Discovering people from other regions , different lifestyles or their hobbies is a big part of discussion and talking at the table d'hôtes : American guests from Caroline, hunters and fond of wild life, spending a few weeks in Scotland watching birds, a Japanese couple cooking a meal for us ( what a surprise for an english family having a japanese dish in France!), an English poet having an immense knowledge of french poetry who met Jules Romain or René Char .. an English cyclist on his way to Paris raising money for charity, an Australian cyclist, regular guest, travelling with his bike, following some stages of the Tour de France ... a French woman restoring monuments in Egypt, a couple from Luxemburg always fans of the Kinks since 30 years ( Do you know the CD Arthur ?) ... a couple living partly in Quebec and South Africa and trying to find roots from 300 years ago in Soyecourt.

Une odeur de sureau dans la campagne

Le soleil de ces derniers jours a épanoui les ombelles de sureau et leur odeur se répand dans les chemins. Toutes les minuscules fleurs blanches débordantes de pollen sont un trésor pour la cuisine. Recette du sirop de sureau : cueillir un gros bouquet de fleurs épanouies au soleil, les mettre dans un bocal en verre, bien tasser et emplir d'eau. Placer dans un endroit chaud, si possible au soleil une journée. Filtrer et ajouter par litre de jus 1,250 kg de sucre. Bien mélanger. Placer de nouveau au soleil pendant 3 jours.

Les premières richesses du jardin : l'oseille

Celle là je l'attends toujours avec grande impatience après l'hiver. Sa couleur et sa fraicheur acide sont vives comme les premiers jours du printemps. Juste cueillie, tombée dans la casserole, puis radoucie par la crème , le bouillon ou le lait elle se fait alors velouté. Elle peut aussi réveiller une purée de pommes de terre.

Le fleuron de l'art gothique est à Amiens

De nombreuses fois je suis entrée dans cette Cathédrale d'Amiens et ai ressenti un envoutement de cet espace à nul autre pareil.
Mais aujourd'hui, au sein d'un petit groupe accompagné par un guide, j'ai compris pourquoi ce monument est considéré comme l'expression la plus aboutie du gothique. Et en Picardie, berceau de cet art, on sait de quoi on parle.
C'est la cathédrale gothique la plus importante de France, classée au patrimoine mondial de l'Unesco au titre de son architecture et de son mobilier et en tant qu'étape des chemins de St Jacques de Compostelle.
A partir de la mi-juin, une recolorisation lumineuse plonge par magie les spectateurs au temps du Moyen Age, quand les statues donnaient à voir toutes leurs couleurs.
Les amoureux des villes trouveront également un intérêt à observer le mouvement très récent d'urbanisation au pied de la cathédrale ... source de polémique.
